Stuzzi blends fresh and dried Calabrian peppers. The dried peppers are slowly shade-dried in southern Italy over 1 to 2 months, using a traditional whole-pepper process. Most industrial sauces rush this step in under 24 hours. Slowing it down preserves the peppers’ natural earthiness and depth.

To bring brightness and savory balance, fresh cayenne peppers are lacto-fermented, adding citrusy lift and umami without overpowering heat.
