Radiatore: Box

Radiatore is shaped like old heating radiators. The ridges are there to grab sauce and hold it in place.

It works best with chunky sauces, sliced cherry tomatoes, or meat that needs something to cling to.

Zelli pasta looks and feels different because it is made differently. It is extruded through bronze dies, which leave a rough surface instead of a smooth, shiny one. That roughness is what keeps sauce where it belongs.

Most large manufacturers use Teflon dies because they are faster and easier. The result is pasta that looks polished but lets everything slide off.

This one does not.
